A new study indicates that a low carb diet is better than a diet low in fat in reducing inflammation and blood saturated fat in metabolic syndrome, which is a condition afflicting one quarter to one third of adult men and women and is an established pre-cursor to diabetes, coronary heart disease, and other serious illnesses. A diet low in carbohydrates is more effective at reducing high triglycerides, saturated fatty acids in the blood and markers of inflammation.

Low Carb Chinese Dessert - Almond Cream

Found this low carb chinese dessert and thought it sounded good!

Serving Size: 8
Preparation Time: 90 minutes

Ingredients:
1/2 cup splenda
1 stick agar*
1 cup water
1 3/4 cups half and half (50% water/cream)
1 tsp almond extract
1/4 tsp vanilla
11 oz mandarin oranges, canned

Directions:
Soak the agar-agar in the water in a pot for 30 minutes, then bring to a boil and stir to dissolve. Add the milk and splenda and simmer for 10 to 15 minutes, stirring often. Add the almond extract and vanilla. Pour into an 8 × 8" 200x200 pan and chill thoroughly in the refrigerator. Cut into triangles and serve with the Mandarin oranges.

*Agar-agar is a seaweed extract that can be found in featherweight rectangular sticks in Chinese markets. It functions like gelatin, albeit with somewhat more flavor interest.

The American Diabetes Association revises it viewpoint on low carb diets in 2008 stating “low carbohydrate diets might seem to be a logical approach to lowering postprandial glucose”. This changes from last year when the ADA stated that low carb diets were not recommended in the management of diabetes.

Okay, low carb desserts = low sugar desserts ... why did it take sooo long to approve that?

My family simply must have dessert, even if it's nothing more than a bowl of fruit with whipped cream on top. I have noticed that some families don't have dessert. Actually, many families today don't even make time to sit down for dinner together. I just believe that eating together is important.

I'm as pressed for time as anyone else, so I've had to come up with some impromptu meals and very simple desserts over the years. But, I have always managed to pull something together.

For special occasions, I go all out and try to make an "impact" with the presentation. On ordinary days, we usually serve ourselves in the kitchen and then gather back around the table. Have you tried strawberries and cream?

You simply take fresh strawberries, sprinkle lightly with sugar and pore in a little cream or skim milk, if you prefer. That was one of my mother's favorites. She would sometimes have it as a midday snack.

No matter what the occasion, if you want to be a success and leave your family and friends filling satisfied, but not bloated, the end of the meal should complement the other dishes served, as well as the beverages. Remember, red wine and chocolate don't mix. You might end up with a sick guest or two, if you try that combination.

A sweet fruity wine is a nice accompaniment for chocolate slivers, but fruit and cheese are a better choice when alcohol is being served. Try slicing an Anjou pear; sprinkle the slices with grated sharp cheddar and some chocolate shavings. Bake just long enough for the cheese to melt slightly, not brown. Serve it up warm, along with your favorite glass of wine.

When the main dishes are heavy, serve simple desserts that are light and airy. Italian Ice, for example. To follow-up seafood and salad, you can serve a "heavier" chocolaty dish. Fruit is always a quick and easy dessert and the healthiest choice. I like using half of a honeydew melon as a serving bowl. Just scoop out the melon, put it in a large bowl, toss with a variety of fresh berries and serve. Return to the melon halves and serve.

  • For cookie crust:

  • 1 Box Crushed Vanilla Wafers

  • 1/2 stick melted butter

  • Combine ingredients and fit into bottom and sides of a 91/2 springform pan.

  • For cheesecake:

  • 1 1/2 lbs cream cheese, room temperature

  • 3 large eggs

  • 1 1/3 C sugar

  • 2 Tbsp flour

  • 2 tsp grated lemon rind

  • 1 1/2 tsp vanilla

  • 2 Tbsb Heavy Cream



  1. Combine cheese and eggs. Beat with electric mixer till perfectly smooth. Then, add while continuing to beat,

  2. sugar, the flour, and flavorings. Pour into the prepared pan. Bake at 325 for 70 - 75 minutes.

  3. Turn off heat and let cool in oven. Do not open the springform pan until completly cool.

Over the years, I have tried searching for something "just-right" for my individual employees. I try to get to know them, learn about their hobbies and their families. But, I'm sure that "World's Greatest Golfer" statue that I got for Bob five years ago is either in a box or in the landfill by now. Eventually, I turned to food.
