Low Carb Dessert - Chocolate Coconut Macadamia Nut Cookies

Low-carb chocolate coconut macadamias nut cookies that I found online, Very YUMMY!


· 5 Tablespoons coconut oil or butter
· ½ cup unsweetened cocoa powder
· ¼ cup cream
· 1 ½ teaspoon vanilla
· ½ teaspoon salt
· 1 cup sugar equivalent in sugar substitute (I like Splenda, but can use any)
· 4 eggs
· ½ cup coconut flour (I used Aloha Nu brand in analysis)
· ½ cup unsweetened coconut
· 36 almond or macadamia nut halves


Preparation:

Preheat oven to 350 F.

1) Melt butter in bowl or 1 quart measuring cup -- you can make the whole recipe in the same container that way.
2) Whisk in cocoa powder until blended. Whisk in cream, salt, vanilla, and low carb sweetener.
3) Taste. This is the point where you want to get the right amount of sweetener for your taste. I tried this recipe with two different cocoa powders -- Hershey and Ghirardelli. I found that I needed more sweetener for the darker Ghirardelli.
4) Whisk the eggs in and beat until they are well-blended. Add coconut flour and blend well, and finish with the dried coconut. Combine well and let sit for 5 minutes. The coconut will absorb most of the liquid.
5) Prepare cookie sheets, either by greasing well, covering with parchment paper, or a silicone baking mat.
6) Drop batter by rounded teaspoons (batter will be about 1½ inches across). Put half an almond or macadamia nut on the top of each, and push slightly to "anchor."
7) Bake for about 12 minutes, until cookies are set and just beginning to brown on bottom.
8) Let cool on pan for about 10 minutes. Remove. When fully cool, store in airtight container.

Makes three dozen cookies.

Nutritional Information (with macadamia nuts): Each cookie has a little over half a gram effective carbs plus 2 grams fiber, 2 grams protein, 5 grams fat, and 51 calories.

Like everyone else I know, I fell off the diet wagon during the holidays and have been being trying to get back on since. Well, here I am jumping back on the low carb diet wagon and I am taking you with me! I also convinced my girlfriend who is a baker, to try a low carb diet instead of other traditional diets, so hopefully we will come up with some new and exciting low carb dessert recipes!

Low Carb Dessert - Low Carb Peanut Butter Cheesecake with Chocolate Ganache

This is my new favorite low carb cheesecake flavor, peanut butter! It was the first time I tried it and it was awesome!

Low Carb Peanut Butter Cheesecake with Chocolate Ganache

4- 8oz packages of cream cheese
4 large eggs at room temperature
3/4 cup Splenda
1 teaspoon of sugar free vanilla extract
1 cup Peter Pan whipped peanut butter with 1/3 less sugar

Take the cream cheese and eggs out of the refrigerator about 45 minutes before you begin mixing to soften the cream cheese and take the chill off the eggs.

When you are ready to begin, start by cracking the eggs into a small bowl making sure not to use the rim of the bowl to crack the eggs to avoid getting shells in the bowl. Set bowl with eggs aside.

Add cream cheese to mixer and mix on high until cream cheese is smooth. Continue mixing and add the Splenda. Once the Splenda is incorporated into the cream cheese, stop the mixer and use a rubber spatula to scrape down the sides of the mixer bowl to insure even mixing. With the mixer back on high add the vanilla and peanut butter. Now add the eggs one at a time letting mixer work in the one egg before adding the next. Again, stop the mixer and use a rubber spatula to scrape down the sides of the mixing bowl. Now you are ready to pour the mix into the greased spring form pan (I used a 8" inch springform pan for this cheesecake).

Bake on a preheated 350 degree oven for 45-50 minutes or until low carb cheesecake is set in the middle. Cool for an hour, add low carb chocolate ganache (recipe follows) and than chill for at least six hours, this low carb dessert is best served the next day.


Low Carb Chocolate Ganache

¼ cup heavy whipping cream
3 mini Hershey’s sugar free chocolates, chopped
2 tablespoons Hershey’s chocolate powder (no sugar added)

Heat heavy whipping cream over low heat and add chopped low carb chocolate. Stir continuously until chocolate is incorporated and looks like hot chocolate. Remove from heat and add chocolate powder (you may want to sift it as you add it to avoid lumps) stir and put back on low heat and continue to stir until all chocolate is thoroughly mixed. Remove from heat, pour over cooled cheesecake and chill.


Low Carb Whip Cream

1 cup heavy whipping cream
½ Splenda
1 teaspoon sugar free vanilla
3 tablespoons Hershey’s chocolate powder (no sugar added)

Put mixing bowl and your whisk blender attachment in freezer to get cold. Add all low carb ingredients together in chilled bowl (you may want to sift the chocolate powder as you add it to avoid lumps) and hand whisk till blended. Once blended, whip the mixture on high until it forms stiff peaks. Serve on top of Low Carb Peanut Butter Cheesecake with Chocolate Ganache!

Low Carb Peanut Butter Cookies

· 1 cup no sugar added peanut butter, creamy or crunchy
· 1 1/3 cups baking sugar replacement (I use Splenda)
· 1 egg
· 1 teaspoon vanilla extract

Directions:

Preheat the oven to 350 degrees F. Grease a large baking sheet.

In a mixing bowl, combine the low carb peanut butter, 1 cup of the Splenda, the egg and vanilla and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork dipped in Splenda, press a crisscross design on each cookie. (At this point I added sugar free chocolate that I cut into small chunks to a couple of the cookies as seen in the picture.) Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining Splenda. Cool slightly before removing from pan. Tip: This batter can be sticky, use a little non stick spray on the spoon and your fingers.

Between running my own business and having a new puppy, I have not had a lot of time to be creative and make up my own low carb dessert recipes so I have been dusting off a couple low carb books and revisting some old favorites. This low carb dessert is favorite of my mom and when we have family dinners at her house, she sometimes makes this for her and I to eat instead of whatever everyone else is having. Straight out of "The South Beach Diet" recipes:

Lemon Zest Ricotta Creme

1/2 cup part-skim ricotta cheese
1/4 teaspoon grated lemon zest
1/4 teaspoon vanilla extract
1 package sugar substitute

Mix together the ricotta, lemon zest, vanilla extract and sugar substitute in a dessert bowl. Served chilled.

Serves one, 7g carbohydrates

Low Carb Chinese Dessert Recipe

This low carb dessert recipe is a cool refreshing snack!

Serving Size: 8
Preparation Time: 90 minutes

Ingredients:

1/2 cup splenda
1 stick agar*
1 cup water
1 3/4 cups half and half (50% water/cream)
1 tsp almond extract
1/4 tsp vanilla
11 oz mandarin oranges, canned

Directions:
Soak the agar-agar in the water in a pot for 30 minutes, then bring to a boil and stir to dissolve. Add the milk and splenda and simmer for 10 to 15 minutes, stirring often. Add the almond extract and vanilla. Pour into an 8 × 8" 200x200 pan and chill thoroughly in the refrigerator. Cut into triangles and serve with the Mandarin oranges.

*Agar-agar is a seaweed extract that can be found in featherweight rectangular sticks in Chinese markets. It functions like gelatin, albeit with somewhat more flavor interest.

83 Calories; 6g Fat (65.6% calories from fat); 2g Protein; 5g Carbohydrate; 1g Dietary Fiber; 20mg Cholesterol; 23mg Sodium. Exchanges: 0 Vegetable; 0 Fruit; 0 Non-Fat Milk; 1 1/2 Fat.

Pot de crème is the name for the individual lidded porcelain jars or pots that this custard is traditionally baked in. This low carb French custard is richer than American custard due to using egg yolks instead of American who use whole eggs.


Preheat oven to 325F

6 large egg yolks
1/3 to ½ Splenda
2 cups half and half
1teaspoon low carb vanilla


Whisk egg yolks and Splenda until just blended. Stirring, bring the half and half to a simmer in a small saucepan. Gradually whisk the hot milk into the egg yolk mixture. Strain through a fine-mess sieve into a bowl or large measure with a pouring lip. Skim off any foam with a spoon. Stir in vanilla.

Pour the mixture into six 4-ounce pot-de-crème cups or ramekins. Put the lids on the cups or seal each ramekin with a snug-fitting piece of aluminum foil to prevent a skin from forming. Bake in a water bath for 40 to 60 minutes or until set but still quivery in the center when the cups are shaken. Take the cups or ramekins out of the water bath and let cool for 30 minutes, then refrigerate for at least 2 hours before serving these low carb custards.



Tips for custards doneness: (low carb or otherwise!)

Most custard should be removed from the oven as soon as the center appears quivery, like firm gelatin when the cup is gently shaken. Completely firm custard is overcooked and will turn slightly grainy.

To be doubly sure that the custard is ready, tilt the cup up at a 45 degrees angle. The center should remain firmly in place without flowing.

Insert a knife two-thirds of the way from the side of the cup toward the center. The knife should come out clean or with just a tiny smudge of low carb custard adhering.

Pumpkin Cheesecake Low Carb Dessert Recipe:

3- 8oz packages of cream cheese

1-15oz. can pumpkin
2 ½ teaspoon cinnamon
1 1/8 teaspoon nutmeg
1 1/8 teaspoon ginger
½ teaspoon cloves
½ allspice


You want to take the cream cheese and eggs out of the refrigerator about 45 minutes before you begin mixing to soften the cream cheese and take the chill off the eggs.

You're fat and you know it! Now I'm going to tell you something you don't already know.

You think you already know why you're fat but you don't. You think it's because you just don't have enough time and motivation to exercise. You think it's because you love food and don't quite have enough willpower to cut back sufficiently. You don't have a clue!

Hunger Games

The real reason you're gaining weight is going to shock you: it's because you have the mind of a well-trained athlete. Don't laugh quite yet. Have you ever noticed how fast athletes gain weight when they retire from competition? It's freakish. The same reason that athletes are good at sports later causes them to bloat -- they have especially "trainable" subconscious minds. If you understand the mechanism then you can learn to control your weight without diet, suffering or an inhuman exercise schedule.

Weight Loss and your Athletic Mind

Before I continue, I should say that it is true: the immediate cause of weight-gain is what you eat and how you live. I'm not preaching any pseudo-science here. However, controlling what you eat and how you live is elusively difficult and I will show you why. If you think you can change your behavior pattern with sheer willpower -- then you just haven't really tried yet.

Sure, you and I pride ourselves in being rational adults, in control of our choices and our destiny. But that's just a load of crap. In truth, we rarely ever do anything that brings us discomfort in the short run. You think otherwise? Go take a straight-cold shower just to prove who is in control. Go without solid food for two days. It won't hurt you, but it will make your body angry. And the fact of the matter is that we are usually slaves to response patterns established by our bodies. Sorry but it's true.

The Key to Controlling your Body is to Control Your Mind

Training your body is all about training your mind. We're not talking calculus here, we're talking about your sub-conscious mind -- where deep emotions, established patterns, habit and instant responses live. You are a trinity of sorts, 1) a lazy body, 2) a clever and fickle conscious mind and 3) a lumbering but steady subconscious that does most of the work around here.

You probably know already that the subconscious mind provides emotional responses to reinforce "good" behavior (like eating pizza) -- but what you might not know is that the subconscious is also responsible for all athletic ability. Even the simple stuff like walking or typing is a constant interaction of conscious commands and unconscious responses. For example, when you learn to shoot a basketball, what you are actually doing is using the conscious mind to burn in a pattern which develops into a subconscious skill-set. When you've truly mastered a move, you "no longer have to think about it". If you're still thinking about the mechanics of a dance step -- it's a sign that you have not "learned it" yet. That is, your subconscious cannot yet take over. Once you have "learned" the skill, your conscious mind need only call out the command and the subconscious does the action.

To better understand your psychology, let's liken your mind to a couple animals: imagine a Chimp riding on the back of an Elephant. The subconscious mind is like a slow dumb strong elephant while your conscious mind is like the clever fast chimp.

The Willpower Myth

The nice thing about this little metaphor is that it allows me to point out the absurdity of the whole concept of "willpower" in the sense of the conscious mind overwhelming the subconscious with a show of brute force. Seriously, just imagine the chimp wresting the elephant. Where's the "brute force" of the chimp? The elephant's just going to sit on him and the game is over. That, by the way, is exactly where every diet ends when supported by willpower alone. The subconscious is a powerful part of your mind. You can control it through persuasion but not with brute force.

The Elephant, the Stick and the String

In Indonesia, elephants are used in construction work because they are so powerful and yet obedient. All day long the elephant moves hundreds of tons of stone and wood and at night he taken to his bed of straw and tied up. Do you know how big the rope is required to hold an elephant? It's just a little string tied to a stick driven into the ground.

You see, when the elephant was very young, he was tied with the same stick and string -- and he was too little to pull free. For the rest of his life, he remembers this and never questions the superior strength of the little stick and string. Think about it.

What are you really capable of? To be blunt, you have no idea. Your limitations are defined by childhood experience -- and bear no relation to your adult capabilities. Like the elephant, you are emotionally tethered by childhood ideas. Most of your adult personality is just a protective cage built by a scared child. What would you give to have the power to redefine yourself?

Now for the good news: you're not just an elephant, you're also part chimp! That could have sounded better but never mind. Your mind has a small, clever, conscious aspect that gives you the ability to reprogram your entire mind. That's right, your conscious mind (the chimp) has the ability to completely re-write and take control of your entire mental reality.

This ability defines humans -- it makes us the most flexible animals on earth and it allows us to train our minds to do amazing things. From playing concert piano to extreme sports, the vast power of the mind is tapped by this uniquely human capability.

Ok, so what does all this have to do with weight loss?

Remember, the elephant learns and repeats patters of behavior that are taught to it -- so the real question is "how to teach the subconscious". Here's the simple single trick that people need to understand. If you understand this simple principle then you can be the master of your own mind. You will also understand why our educational system doesn't work (but that's another article entirely).

Our subconscious mind ignores most of what we tell it because we bark at it in the wrong language. The language of the subconscious mind is EMOTION. Using the barometer of our emotion, the subconscious mind is able to determine the importance of any particular behavior. For example, say that you're trying to learn a new skill. You're working hard to learn but you are not enjoying the task and your emotions are saying "this sucks, I wish I were elsewhere, how much longer is this going to take?" Well, it's going to take a lot longer because you're broadcasting to your subconscious mind the message "ignore this activity, just move along, there's nothing to see here." What was your emotional state, and how easily did you learn in high school?

It may not feel like it but you're in full control of your conscious emotions. And this is the fundamental method of programming the subconscious mind. It is, without a doubt, a form of natural hypnosis. Whereas traditional hypnosis works by moving aside the conscious mind, emotional programming works by using the conscious mind - but to the same effect.

Now for the dark side: remember how I mentioned that have three aspects? Body, conscious and subconscious? Well, as it turns out, your body is busy programming your subconscious mind all the time. For example, you're hungry so you bite into a slice of thick cheesy pizza -- at which point your body screams out (on an emotional level) "this is good activity, very very good activity". Food cravings are actually subconscious patterns based on years of such programming.

Thankfully, the mind is fully re-programmable.

Now that you understand the basic mechanics of programming your mind, you can put it into practice right away. What you are going to do is to replace food cravings with exercise cravings. This technique is fun and very powerful because, rather than working against years of food programming, you're going to do some mental Ju-Jitsu and simply translate an existing food craving into a desire for exercise. Magic? It's better!

It's quite simple: first of all you're going to stop eating for a while (non-sugared drinks are ok). This is not a diet plan, we're not yet trying to lose weight. We're just trying to stimulate a hunger response. Now, when you begin to feel the initial sense of hunger, do this:

Breathe in deeply, relax, and feel the hunger -- then don't think of food. Instead, imagine yourself doing sit-ups and absolutely loving it. That's right, visualize yourself hungry and doing sit-ups and let a feeling of joy and satisfaction flood over you. Then return to whatever you were doing.

In a few minutes, when the next pang of hunger comes, repeat this mental exercise. Keep it up for an hour or so and then go have a light snack. While you are eating (especially while you are eating) visualize yourself doing sit-ups and loving it. Associate in your imagination hunger, food, situps and joy.

Hunger, Food, Sit-ups and Joy? He's Crazy

Perhaps, but what you are doing is linking a desirable behavior to a very well established response pattern. You will be amazed at how you can use this technique to stimulate a deep urge to do sit-ups. The mind is truly amazing.

By the way, after a few days go ahead and give into the urge to do some sit-ups. As you exercise, make sure to continue the emotional feedback by "letting" yourself enjoy exercise. If you feel yourself not enjoying the process, take control of your emotions right away or stop exercising. It's not worth sabotaging your work to burn a few extra calories.

Don't push your body, push your mind! Your mind is the only gymnasium that really matters. Eventually, your mind will push your body and you will be able to enjoy the process.

I remember several years ago when I first experimented with this technique. As I started craving situps, I realized that doing situps would physically relieve any sense of hunger for an hour or so. I thought I had stumbled upon the strangest diet plan ever, the "silly, happy, situp diet". But really, what I had discovered was the ability to consciously sublimate deep cravings to accomplish a desired objective. The mind is amazing but it just doesn't come with a user's manual. Most of the time it works pretty well on autopilot so we rarely learn to pop the hood and explore its full potential. That's a shame because most of what we want in life -- success, happiness, health, good relationships, the satisfaction of achievement -- these things are all within our reach and the only thing holding us back is, you guessed it, a string and a stick.

o Irritability - Can often be labeled as parent/child confrontations. Also many parents of teens just think it's a normal part of the teenage years.

You won't see all of this at once. You will notice one of them, then a month or two latter something else...

What To Do If You See Symptoms Of Diabetes In Children

Get your child tested for diabetes IMMEDIATELY. Don't wait. The test is simple and painless. The longer you wait the more difficult the disease can be to control.

These symptoms may not even be noticed until the disease in is full force. It's important to learn to recognize these symptoms. With early detection children with type 2 diabetes can learn to control the disease with diet and exercise.

Left untreated the symptoms of diabetes in children results in more defined and difficult treatment. Medications and insulin must often be used to control diabetes. Diabetes is a disease that should not be taken lightly.

There are two types of diabetes, type 1 and type 2.

Type 1 diabetes occurs when the body no longer produces insulin.

Type 2, the most common type of diabetes occurs when the body develops a resistance to insulin, or does not produce enough insulin. Type 2 diabetes, once labeled adult onset diabetes, has become more and more prevalent in children.

Research has documented two primary factors contributing to the rise in type 2 diabetes in children. The factors are: 1) children today are more inactive, and 2) unhealthy diets in children. Today's lifestyle of fast-food meals, TV, computers, and hand-held games has put many at risk of developing symptoms of diabetes in children.

This week someone very dear to me ended up in the hospital where she was told that she has Type II diabetes. I know that this disease is on the rise, but somehow when it happens to someone close to you, it goes from being an abstract statistic to a personal reality. One of my first thoughts after I heard the diagnosis was that her life has changed forever. She will need to take medication in some form and she will need to monitor her blood sugar carefully to maintain the right balance of insulin and blood sugar. And, it isn't just about not eating sweets. She will need to eat at regular intervals and be aware of the fats, carbs and proteins of all of the foods she eats. She will need to get regular exercise and maintain a healthy weight. She will need to sleep regularly and manage the stress in her life. In other words, her health and well-being will be based on how successfully she balances all these components in her life.

As all these thoughts were racing through my mind, I had a sudden epiphany!

Hunger Games

All of the recommendations that I was thinking about for her apply to me too-to all of us! The big difference between her and me is that she will need to balance her insulin levels manually, herself, with the help of her doctor, while those of us without diabetes can rely on our bodies to manage that important job for us. We take it for granted that our bodies will keep working in the way we expect, but the truth is, we all need to eat at regular intervals, be aware of the fats, carbs and proteins of all of the foods we eat, get regular exercise, maintain a healthy weight, sleep regularly and manage the stress in our lives.

Because our bodies are miraculous machines, we do have some margin in our lives for neglect, especially when we are young. We can overeat, under sleep, overstress, etc. and our bodies forgive us, make the adjustments, and go on. But only up to a point. Of course, as we age that point gets closer and closer. Eventually, there is little or no margin left, and we have to toe the line or else our bodies will fail. For a person with diabetes, whether due to heredity or lifestyle or a little of both, this moment may arrive sooner.

Having said that, I should point out that one of the grave concerns we have as a culture is that Type II diabetes is no longer a disease of old age. It is happening to people at a younger and younger age. This is partly due to the increased incidence of childhood obesity, and partly due to our food supply and sedentary lifestyles. It was probably easier to maintain balance in our lives when meals were mostly eaten at home, fast food and empty-calorie snacks were not commonplace, and television and video games did not play a large part in our children's lives.

Just in case you don't know what Type II diabetes is, here is a simple little primer. When you eat food and it digests, much of it is broken down into glucose, commonly called blood sugar. As the glucose enters your blood and is traveling to the various cells in your body to give you energy, etc., your pancreas releases a hormone called insulin that (among other things) signals your cells to receive the glucose, it goes into your cells, and all is well.

However, if your cells become resistant to the call from the insulin, such as in the case of obesity or family history or both, the glucose cannot get into the cells, and your pancreas will try harder to produce more insulin. Eventually, the pancreas may become exhausted and will not be able to meet even your minimal need for insulin. So now you have cells that are resisting the insulin and, at the same time, not enough insulin to trigger the cells to accept the sugar-a double whammy!

Since it is not getting into the cells, the glucose stays in the blood and some is excreted in the urine. High blood sugar is an unnatural state that can cause damage to all of the systems in your body and, if not treated, can be fatal. This is the reason your blood sugar levels, as well as the presence of "sugar" in your urine, are important indicators of where you are at in this process.

Your body has an amazing ability to compensate and keep you going, even under adverse conditions, but again, only to a point. One of the problems with diabetes is that it may not show any symptoms until much of the damage to your heart, nerves and blood vessels has been done. On the other hand, if you catch it early enough, the problems can be reversible.

There are some classic symptoms of diabetes, such as excessive thirst, excessive hunger, frequent urination, blurry vision, unexplained weight loss, and fatigue that you should be aware of, especially if you have a family history of diabetes. If you have any of these symptoms, it is a simple matter to get your blood sugar checked. Don't wait for your body to give you a more alarming wake-up call. The sooner you discover that your blood sugar is elevated, the sooner you have a chance to correct it, and avoid the systemic damage this disease can cause.

Getting regular eye exams can also help. Many people have discovered that they have diabetes when visiting their eye doctor to get their glasses or contact lenses checked. They say that your eyes are the "windows of your soul", but they also can be indicators of elevated blood sugar. In other words, the blurred vision you have been experiencing may not be due to a need for new glasses, but could have a more serious underlying cause.

I should note here that Type I diabetes, also known as "juvenile diabetes," an autoimmune disorder, is not the same as Type II diabetes. Type II diabetes, which is more closely connected to lifestyle, also accounts for more than 90% of the diabetes cases that occur.

So, now we are back to where we started. Whether you or a loved one has been diagnosed with diabetes, whether you have a family history of this disease or not, you can put yourself in the drivers seat of your health. The first step is to educate yourself about healthy eating. Learn enough about the foods you eat to make good choices. Eat regular meals and healthy snacks, made up of fresh, whole foods with proportionate amounts of carbs, proteins and fats. Limit or avoid overly processed food, junk food and fast food. Become label savvy so that you can evaluate whether the products in the store aisles are worth your food dollars and will fit well into your healthy eating lifestyle.

Low Carb No Bake Cheesecake Dessert Recipe

Okay, this is a very low carb dessert recipe I eat a lot because it is fast and easy!

1 8oz package of cream cheese
1 Tablespoon unsweetened chocolate powder
3 Tablespoons Splenda

Put the cream cheese in a microwavable dish and heat on high for 15 seconds. Add chocolate and Splenda and mix until thoroughly blended. Now you can just stick the bowl in the fridge with some plastic wrap on top and wait until it firms and enjoy.

I was lookin for a low carb dessert recipe that was refeshing in the summer heat and found this on "Everyday Italian" and just changed the sugar to Spelenda, cutting the carbs in half!

LOW CARB FROZEN MASCARPONE AND STRAWBERRY GRANITA


1 cup water
1/2 cup Splenda, plus 1 tablespoon
1/2 cup chopped fresh mint leaves
2 cups chopped strawberries, plus 1 cup finely chopped
1/2 cup mascarpone cheese
3 tablespoons lemon juice
Pinch salt

Place the water, 1/2 Splenda, and mint in a small pan and bring to a simmer, stirring occasionally to help dissolve the Splenda. Let simmer over low heat to steep the mint. Then strain the mint from the simple syrup. Discard the mint. In a food processor combine 2 cups of strawberries with the remaining 1 tablespoon of Splenda. Run the machine to puree the strawberries. Add the mascarpone cheese, lemon juice, and salt. Run the machine until the mascarpone cheese is fully incorporated. Add the mint simple syrup and run the machine to combine. Place the strawberry mixture in an 8 by 8-inch glass dish and place the dish in the freezer. The low carb mixture will take about 4 hours to freeze.

To serve, use a fork to scrape the low carb Granita. Spoon the mixture into chilled bowls. Top with the finely chopped strawberries and serve immediately.

NOTE: YOU CAN USE ANY FRUIT YOU LIKE OR WHAT EVER IS IN SEASON.

Swiss Medica Aims Women's Product to Male Consumers

PMS Escape Formulation Might Be Good For Stressed-Out Men, Too! When Swiss Medica goes shopping, don't expect them to pay retail for the consumer health products they purchase. Since acquiring the O24/Sport product from insolvent German-based General Cosmetics, Swiss Medica (OTC BB: SWME) roared onto the radar screens of U.S. and Canadian pharmacy chains. Part two of their corporate strategy was the necessity of an encore product to avoid being called a "single product company." Obtaining the North American licensing rights to PMS Escape overcame that hurdle. Internutria, which marketed PMS Escape in the mid to late 1990's, sold more than .6 million of the product in about 25,000 stores, for the short time after it was launched in 1996.

However, a setback for Internurtria's parent company, Interneuron Pharmaceuticals, Inc. (NASDAQ:IPIC), specifically a recall of Redux, forced the company to abort the launch of PMS Escape. In the same way Swiss Medica successfully revived the O24 product, lightning could strike twice in the form of PMS Escape' reintroduction. Interviews with two key PMS Escape spokeswomen helped clarify which direction Swiss Medica might run with their newly acquired product.

Hunger Games

Perhaps a PMS Escape makeover is in progress, in the same way O24/Sport morphed into the O24(TM) Essential Oil Pain Neutralizer? Sure, the packaging says PMS Escape and the website present the product as "a dietary supplement developed for women with normal PMS-related disturbances in mood and appetite." However, the PMS formula could delve into new territory: Not Just For Women. In other words, stressed-out men might someday soon be customers for a variation of the PMS Escape formula. One such hint came during a recent interview with Dr. Judith Wurtman, the inventor of PMS Escape (see brief bio below). She told us a revealing anecdote:

"There is one gentleman who has been taking this for years. He has a very stressful job. He read about PMS Escape in his daughter's magazine. He called me and asked if he could use this. I told him, 'Sure, it's made up of a specially formulated group of natural carbohydrates.' He had his daughters buying it for him, and he started taking it. He would take it only once a day when he left work. By the time he got home from work, he felt fine. It (PMS Escape) has a cute name, but it's not restricted to women. Men can certainly be just as stressed as women. It's just not macho to do something about it."

Wendy Kramer, Vice President of Swiss Medica who will be re-introducing PMS Escape to pharmacy and supermarket chains, said during a recent interview, "PMS Escape has been shown to be effective in reducing stress, irritability, food cravings and improving concentration." But, she looked beyond the immediate game plan, suggesting multiple products, "There is reason to believe that a similar formula will lend it self to a stress product, a weight loss product, or a product for feeling anxious or irritable, or a product for concentrating better." Kramer frequently emphasized throughout the interview, "These are all avenues we are going to pursue clinically with this formulation for PMS Escape." Kramer referred to Dr. Wurtman's current use of a modified formulation of the PMS Escape product as a weight loss product, "She's had quite a bit of success with it."

Numerous serotonin deficiency experiments were done at MIT, and elsewhere, which previously identified broader uses for the PMS Escape formula. For example, Dr. Wurtman explained, "If you find people who are going through smoking withdrawal, and they are overeating carbohydrates, which they tend to do, it probably would help if you gave them the carbohydrates in a drink form." Wurtman underscored, "Serotonin is absolutely involved in the mood changes that occur when nicotine is withdrawn." Expansion beyond the current boundaries of the PMS Escape formula may already be past Swiss Medica's blueprint stage, although no details were offered.

Serotonin Levels are the Key to PMS

It was a logical choice to pursue pre-menstrual "mood and appetite" disturbances during a series of serotonin deficiency experiments at MIT. Dr. Wurtman explained the background behind her development of the PMS Escape formulation, "We did a series of experiments, first with a drug that increased serotonin. When serotonin was being increased by this drug, they (women) became less anxious, irritable, angry, craved fewer carbohydrates and could concentrate again, in other words, they felt like themselves again." Her work, in conjunction with her husband Dr. Richard Wurtman, led to the development of the use of Prozac®, which MIT patented for very severe PMS, and has since been sold under the brand-name, Sarafem®. "At the same time, we decided to just look and see whether carbohydrates themselves would have any positive impact on mild (not the raging kind of) PMS," Wurtman pointed out. "We found that women really did report an improvement in their mood and their cravings. That was really the beginning of a series of experiments that led to the development of PMS Escape."

Why women? Dr. Wurtman revealed what many men have been dying to hear, "Women are more likely to experience mood changes than men, because women's brains have less serotonin to begin with, than men's brains." Hence, PMS Escape, which is made especially for women. But, serotonin bears further discussion to better understand why Swiss Medica might expand the PMS Escape formula into other vital "emotional pain" areas. Such problems are now addressed with mood-altering prescription drugs, which rake in billion annually.

Serotonin is one of many different neurotransmitters in the brain. Each one of these "brain chemicals" has an important role. As the neurotransmitter most frequently related to depression, serotonin controls several critical physical and emotional functions, including the regulation of hunger, thirst, mood, breathing, sleep, confidence, attitudes and many other things. Says Dr. Wurtman, who also authored "The Serotonin Solution":

"When you have enough serotonin in your brain, you have a stable emotional feeling. When you don't have enough serotonin, or it's being used up too quickly, your mood can change so you feel depressed, angry, confused, or you have difficulty focusing. You have difficulty being attentive. You feel easily distracted. You become very irritable. Sometimes, your mood goes up and down very quickly. You can also feel very anxious. In addition, you feel tire - a sort of tiredness you might feel, like it's been many days without sunlight in the winter time. It's where you can feel incredibly fatigued all over. That comes from too little serotonin. It is also involved in regulating the appetite, in not making you hungry to eat, but in turning off the appetite when you've had enough to eat. It is also involved in other physiological behaviors in the body like chronic fatigue where there might be enough serotonin so people might feel aches or their joints hurt."

Serotonin Deficiency Creates Volatile Emotions

Thirty years of human and animal studies demonstrate that serotonin nerve circuits encourage positive feelings, such as calmness, relaxation, increased confidence and better concentration. Serotonin neural circuits are said to help offset the emotions caused by brain dopamine and noradrenalin circuits, which promote negative emotions such as fear, anger, tension, aggression, anxiety and erratic sleep. Serotonin deficiency syndrome can manifest in many emotional and behavioral problems, including PMS, depression, insomnia, compulsive behavior and addictions. A chronic deficit of serotonin in the nerves using it as a transmitter is what leads to the deficiency syndrome. This deficit in turn derives from various problems relating to the nutritional biochemistry of tryptophan.

Wendy Kramer explains the action of PMS Escape in the context of tryptophan and increasing serotonin levels:

"Tryptophan is an amino acid that is commonly found in food. When we eat certain proteins, it breaks down during digestion to give us tryptophan. Tryptophan is then converted to 5-Hydroxytryptophan (5-HTP) in the brain. It is this substance that in turn is converted to Serotonin. What PMS Escape does has little to do with any of the three. It causes an insulin response, which in turn plucks other amino acids out of the blood. Insulin does not attach to tryptophan, therefore allowing more tryptophan to cross the blood brain barrier and convert to 5-HTP and then into serotonin. In normal conditions, tryptophan is not only a small amino acid, but exists in the body in small amounts. So it has lots of competition when it comes to crossing into the brain.

The Problem with Tryptophan

A devastating crisis swept through the natural foods sector in the late 1980s. L-Tryptophan had emerged as the amino acid of choice because it was a health food supplement many were taking as a sleep aid. In early 1990, the Food and Drug Administration (FDA) banned the sale of over the counter L-tryptophan dietary supplements because it was linked to an incurable, debilitating muscle illness, Eosinophilia-Myalgia Syndrome (EMS). Over 1500 were permanently disabled and 37 people died from contaminated batches of L-Tryptophan. A division of the Japanese petrochemical company, Showa Denko KK, had reportedly been experimenting with its purification process by genetically modifying bacteria to reduce their manufacturing costs. Later research identified the impurity, since labeled "peak E" or "strain V," which reportedly led to those tragedies.

While not available as a dietary supplement, the brain requires tryptophan for "peace of mind" and better sleep. Tryptophan has a tough time crossing the blood brain barrier so it can help produce serotonin. However, a high intake of carbohydrates induces an insulin response, which then goes into the blood. The insulin response clears out the five other competing amino acids (valine, leucine, isoleucine, phenylalanine and tyrosine), but not tryptophan. In layman's terms, Wurtman said, "What insulin also does at that moment is re-arrange the pattern of amino acids in your blood so that one of those amino acids, tryptophan, gets into your brain.

This also helps explain why a high-protein diet can make someone cranky. Dr. Wurtman shed light on this, "A woman who goes on one of those high protein diets may find within a couple of days a feeling that she is less calm and less content and less able to control her emotions than she was before she started the diet." The dieter might say, "I'm not hungry on the diet, but I can't stay on it anymore because I have to have carbs!" Insufficient tryptophan is making its way past the blood brain barrier, provoking a serotonin deficiency.

PMS Escape Fills the Void

In its simplicity, PMS Escape starts the process that results in higher serotonin levels. "The nice thing about PMS Escape is that it works faster than food," said Dr. Wurtman. "You don't have to prepare and it works faster than food. We picked the carbohydrates for their digestibility."

Why not just eat a couple of bowls of steamed rice or pasta? Dr. Wurtman explained, "One of the characteristics of women with PMS is impulsiveness. One of the problems is women probably won't steam the rice, and then wait to eat it. While they're steaming the rice, they might have chocolate bars. They are going to throw food in their mouths until they feel better."

Basically, PMS Escape puts a leash on the impulsiveness. "People don't have to worry about controlling the amounts they are eating," said Wurtman. "They'll take one packet, and it's enough." PMS Escape tastes pretty much like a packet of Crystal Light®, according to Wendy Kramer. "They'll never say, 'This tastes wonderful and I'll have six of them,'" Dr. Wurtman laughed, then advising, "Whereas if you tell people to even have breakfast cereal, they might eat the whole box." On a more serious note, Wurtman concluded, "What we do is tell people to have the PMS Escape, and then you'll be calmer, you'll be in control. You're impulsiveness will be under wraps. Then, you'll be able to pick and choose the other foods you're eating with the appropriate amounts."

"It is important that brain serotonin be kept at an adequate level during that period of the menstrual cycle when women experience PMS," reported Dr. Wurtman and her team in a 1995 article published in the Journal of Obstetrics and Gynecology. She wrote then, before developing the PMS Escape formulation, "To help maintain optimum brain serotonin levels without the use of SSRIs, which can have a variety of unwanted side effects, special dietary nutrients have been investigated and shown to be effective."
From her research at MIT came PMS Escape. According to Wendy Kramer, "It (PMS Escape) should be in retail pharmacies this summer." More importantly, when will men be able to enjoy the same heightened serotonin benefits women have with this formulation?

Your mind is a very powerful tool. It is said that your brain carries out around 100 Trillion operations per second! That's a fantastic number! Some data shows that it could even be between 1013 and 1016! Unreal! Our brains are calculating so many different topics all at once. From the temperature, to hunger, to pain, as well as the past and future. It really is a remarkable organ. But I like the term 'tool'.

When our thoughts turn to civilization and how to succeed within it - our minds may play some strange games on us. It is important to recognize what those games are - and most importantly how to avoid/fix them.

Pac-10 Football Predictions 2010

The Pac-10 has had a big off season shakeup with the additions of Colorado and Utah for the 2011 season. USC will welcome in a new head coach in Lane Kiffin, as former boss Pete Carroll has left to coach the Seattle Seahawks in the National Football League. The Oregon football program has to be somewhat disgusted by the fact that QB Jeremiah Masoli has been suspended for the season, and RB LaMichael James has been suspended for the season-opener. Not to mention former head coach and first-year athletic director, Mike Bellotti, has stepped down.

With all that's gone on, all that really matters right now is what happens on the field. I give my 2010 Pac-10 football predictions below to show you where these teams finish in the final standings.

Hunger Games

2010 Pac-10 Predictions:

1.) USC - The Trojans may only return 11 starters, but what they have coming back and coming in makes them the most talented team in the Pac-10. And talent usually wins out, plus QB Matt Barkley is a year older and ready to lead this offense in his sophomore campaign. Head coach Lane Kiffin has instilled a new hunger in this team with an emphasis on hard work. And they get Oregon at home, which is likely the game that decides which team wins the conference.

2.) Oregon - The questions are quarterback are the reason I am not picking the Ducks to win the Pac-10, because they certainly have plenty of talent everywhere else. Senior Nate Costa or sophomore Darron Thomas have the daunting task of replacing the suspended Masoli. The defense returns 8 starters and plenty of speed, and this unit will have to carry them. The offense also returns all 9 starters, including their electrifying RB LaMichael James and all 5 offensive linemen. A road loss at USC will have the Ducks finishing second.

3.) Washington - QB Jake Locker and RB Chris Polk lead an experienced offense with 9 returning starters. The Huskies will put up plenty of points to win, but whether or not they make a bowl game depends on a defense that returns 6 starters. They lost two players to the NFL in Donald Butler and Daniel Te'o-Nesheim, and both Kalani Aldrich and Everrette Thompson who are projected starters each missed spring ball with injuries. The questions surrounding their defense will keep the Huskies from finishing in the Top-2.

4.) Oregon State - It's hard to count this team out considering their have two of the biggest playmakers in the conference returning in RB Jacquizz Rodgers and WR James Rodgers, who are brothers. In fact, the Beavers return 17 starters in all, but one position they do not return anyone is at quarterback. They will get USC and Oregon at home late in the season, but I don't think their QB play will be up to par and it will ultimately cost them a chance to win the Pac-10.

5.) California - The offense should do its job with QB Kevin Riley and all 5 offensive linemen returning from a year ago. Head coach Jeff Tedford has no problem finding running backs, and Shane Vereen should adequately replace Jahvid Best in the backfield. The Bears will need playmakers to step up at WR, because Cal only put up 24 points or more three times in conference play last year. They also have big questions at all three levels of the defense with only 6 starters returning to the stop unit. A middle-of-the-pack finish for the Bears is inevitable.

6.) Stanford - The Cardinal will have to replace 1,800-plus rusher Toby Gerhart which will not be easy. They do have QB Andrew Luck back from an offense that was solid threw the air at 225.2 PYPG while putting up 35.5 PPG in the process. They have 8 starters returning offensively, but the defense only has 6 players back from a unit that gave up 402.7 YPG. Stanford will score points, but it won't do them a whole lot of good when they won't be able to stop anybody.

7.) Arizona - The Wildcats put up 27.4 PPG last season and welcome back 9 starters on offense. QB Nick Foles and RB Nate Grigsby, two key pieces, are each returning. Arizona should score points, but what once was a reliable defense season after season has several question marks entering 2010. Only 4 starters return, and the Wildcats will have to replace five starters along the front seven which will likely having them losing the battle at the line of scrimmage against some very good offensive lines in the Pac-10.

8.) UCLA - The Bruins did make progress in Rick Neuheisel's second year, going from 4-8 in 2008 to 7-6 in 2009 while beating Temple in the EagleBank Bowl. Expectations from the third-year coach are to win at least 8 games this year, but the schedule is daunting. They'll have to face Texas, Houston and Kansas State in non-conference play. The Bruins return just 7 starters on offense and 5 on defense. They need QB Kevin Prince to finally blossom, and they will be looking for a better running game courtesy of the newly-installed Revolver offense by OC Norm Chow, who stole the idea from Nevada's Pistol scheme. UCLA's backbone last year was their defense, but they lose too much talent to be able to perform up to the level they did a year ago, allowing 21.2 PPG.

9.) Arizona State - The same problem that arose a year ago is back to bite the Sun Devils again in 2010. They aren't going to be able to improve on the 22.3 PPG they scored last season with only 4 starters back on offense. They have to break in a new QB, and offensive coordinator Noel Mazzone has a tall task ahead in trying to get this unit to put more points on the scoreboard. ASU should stay competitive thanks to a defense that returns 7 starters from a unit that gave up 297.6 YPG and 21.6 PPG last season. Pac-10 Defensive Player of the Year, MLB Vonaze Burfict, is back to lead the defense along with DT Lawrence Guy.

10.) Washington State - Paul Wulff is just 3-22 in his first two seasons with the Cougars. He does appear to have as much depth and experience as he's had in his three years heading into 2010, but unfortunately the talent isn't quite there to yield positive results just yet. There are no proven playmakers on offense, and the defense has holes everywhere. QB Jeff Tuel is their best hope as he flashed his potential by throwing for 354 yards against California, but the offensive line couldn't keep any QB upright as the Cougars allowed 53 sacks last season. The defense couldn't stop anyone either, giving up 2,837 rushing yards in 2009. The good news is that this team can't get much worse, but the bad news is that even a slight improvement won't get them out of the Pac-10 cellar.
